Menu Monday



To help me stay motivated to cook during the week and also to have the planning out of the way I’ve decided to share what’s on our menu for the week. Here’s what we are having.



Cajun Meatloaf and Green Beans

Crock Pot Taco Meat with Black Beans

Spinach Chicken Quesadillas

Homemade Pizza and Salad

Panko Crusted Chicken Breast Stuffed with Ricotta, Spinach, and Tomato

Tilapia with Veggies and Rice

Stuffed Meatballs with Spaghetti Garlic Bread and Salad


This menu is a little ambitious, we will see how many of these meals we actually have this week.  I’d imagine a few will carry over to next week. I like to prepare a few things that I know will leave plenty of leftovers so the hubby can take them for lunch a few days, the meatloaf being one of them. Homemade pizza, is one of our “go-to” meals and we tend to have them pretty frequently. I use the whole wheat artisan roll out crust and pile on whatever veggies and meat we have in the fridge – quick and easy. The stuffed meatballs and crock pot taco meat are new pinterest meals, so I am curious how they will turn out. So that’s what is on our menu this week, what’s on yours?

    Ooooh the Chicken Breast stuffed with Ricotta, Spinach and Tomato is really good! I’m going to have to try the Spinach Chicken Quesadillas sometime. Thanks for posting! I’ve been awful at menu planning lately, but maybe I’ll start back up…next week :) Enjoy your yummy recipes!
